Head Chef

PURPOSE
Bear Hills Casino is seeking a talented and visionary Head Chef to lead our dynamic culinary team. The Head Chef will be responsible for overseeing all aspects of kitchen operations, including menu development, food preparation, cooking, and presentation. The ideal candidate will have a strong culinary background, exceptional leadership skills, and a passion for creating extraordinary dining experiences. The Head Chef will demonstrate leadership and a professional image to all guests, employees, sales accounts, representatives, vendors, competitors, and governing agencies while maintaining employer standards for guest satisfaction, employee satisfaction, quality assurance and asset protection.

DUTIES AND RESPONSIBILITIES

  • Develop and execute creative menus that showcase seasonal ingredients and cater to diverse tastes and preferences

  • Lead and inspire a team of culinary professionals, including Sous Chefs, line cooks, prep cooks, and kitchen assistants, to consistently deliver exceptional dishes and service

  • Coordinate, supervise, and actively participate in the preparation, cooking, and controlling of all meal periods, ensuring consistency and quality across all outlets

  • Oversee all kitchen operations within budgeted guidelines and to the highest standards, including inventory management, cost control, and waste reduction initiatives

  • Train, mentor, and coach kitchen staff in the fundamentals of cooking, culinary techniques, and plate presentation, fostering a culture of continuous learning and improvement

  • Maintain a clean, organized, and efficient kitchen environment, adhering to food safety regulations and sanitation standards

  • Collaborate with the management team to develop strategies for enhancing guest satisfaction, driving revenue growth, and achieving culinary excellence

  • Stay updated on industry trends, culinary innovations, and customer preferences to continuously evolve and elevate our menu offerings.

  • Foster a positive work culture based on teamwork, respect, and open communication, ensuring a productive and harmonious work environment.

  • Ensure kitchen staff understand and comply with loss prevention policies to prevent accidents and control cost

KEY WORKING RELATIONSHIPS

The position requires the ability to communicate clearly, deal tactfully and work effectively with Bear Hills Casino kitchen staff and management.

EDUCATION, QUALIFICATIONS AND /OR EXPERIENCE

  • Proven experience as a Head Chef in a high-volume, upscale dining establishment

  • Culinary degree or equivalent certification from a recognized culinary institution preferred

  • Strong leadership abilities with a track record of effectively managing and motivating a diverse team

  • Exceptional culinary skills with a creative flair for menu development and innovation

  • Excellent communication and interpersonal skills, with the ability to inspire and mentor kitchen staff

  • Extensive knowledge of culinary techniques, food safety standards, and kitchen equipment

  • Ability to thrive under pressure and maintain composure during peak service hours

  • Flexibility to work evenings, weekends, and holidays as needed

WORKING CONDITIONS

Work conditions and physical capabilities, fast paced environment, repetitive tasks, physically demanding, attention to detail, combination of standing, walking, bending, crouching, kneeling, must be able to lift/carry up to 30lbs.
